Towards Inclusive Gastronomy: co-creating an allergen-safe restaurant experience

The project Inclusive Gastronomy aims to support an enjoyable experience when dining in restaurants for food-allergic people. Where they can eat without the stress of an allergic reaction - ultimately aiming for an equal dining experience as nonallergic guests.

Co-creation session

With the aim to generate ideas and identify requirements for an inclusive dining experience, we organized a co-creation session. Ten food experts (food-allergic guest, clinician, chef, etc) participated in a workshop dinner. They explored opportunities and constraints from multiple perspectives and translated ideas into magical elements for safe dining in restaurants with food allergies.

Probes

Based on these discussions, the participants made magical elements (low-fidelity prototypes). With the identified opportunities, we will develop probes (speculative prototypes) that show how Inclusive Gastronomy can support food-allergic people dining out safely and comfortably in the future.

About Jillian de Bie

Jillian is a food technology designer and is currently pursuing an EngD degree (post-master's) at TU/e as part of the Inclusive Gastronomy project. The project is funded by The knowledge and innovation network of the creative industries ClickNL in collaboration with Felix Robotics.
